Sweet Potato Lasagna

Serves 5

You will need:

– 1000g lean ground turkey
– 400g sweet potato
– 1 egg white
– 1/2 cup low fat cottage cheese
– 1/2 cup reduced fat mozzarella
– 2 small tomatoes
– 15oz tomato sauce
– 1/3 cup mushrooms
– 1/3 cup red onions
– 1 tbsp garlic paste
– 1/2 cup chopped coriander
– 1 tbsp Italian seasoning, sea salt,
– pepper

Method:

Set oven to 200C Slice sweet potato using a sharp knife & separately chop up tomatoes, onions & mushrooms.

Mix cottage cheese with egg white & set aside. Sauté red onions with garlic paste, then add meat, tomatoes, cilantro, mushrooms, tomato sauce,

Italian seasoning.

Build lasagna. Add sweet potato slices, meat sauce, cottage cheese & then repeat. Top with mozzarella.

Cover with aluminium foil & bake for 45 minutes at 200C.

Serve with crisp salad & balsamic glaze.

If you do not like sweet potato you can replace sweet potato sheets with thin sheets of egg omelette’s.
