Indian Lamb with brown Rice and Sweet Potatoes Fries

Serves 2

You will need:

  • 400 g diced lamb (remove any fat)
  • 1 tsp olive oil / Fry light
  • seasoning to taste
  • 6 curry leaves
  • 2 red chillies (could use green) diced
  • 1/2 tin tomatoes (diced)
  • 2 medium onions diced.
  • 2 inch ginger or 1 tsp
  • 3 cloves of garlic diced or 1 tsp lazy garlic
  • 1 tsp lazy garlic
  • 1 tsp turmeric

Method:

Spray a pan with fry light or use 1/2 tsp olive oil.
Add 1 of the diced onions, ginger, garlic, 1/2 tsp fennel seeds, tinned tomatoes, and a pinch of salt. Let this cook for 5 mins. Add the lamb, and turmeric with 200 ml of water, cover and let simmer until the lamb is tender.

Remove the lid and reduce the liquid by simmering away. When most of the liquid is gone, turn off the heat and cover.

In another pan use 1/2 tsp olive oil or fry light. Heat, and add the other diced onion, and 1/2 tsp fennel seeds.

Cook until the onions brown, then add the red diced chilli, curry leaves and cook for a minute.

Add the lamb mix to the cooked onions and stir.

Serve with Brown rice and sweet potato chips
